Aubergines, roasted peppers and tomatoes stew



Costachel says: "Pastorel has many great recipes, but this one is 'further down the road', by far, one of my favorites for summer menu. It is, if you will, the ingenious idea of ​​removing the baked eggplant and peppers from the inevitable salads, giving them a different purpose in life. 


You need for it:
3 eggplants
1 kg peppers
1 kg of tomatoes
1-2  bouquets of parsley (I added basil also)
5-6 cloves of garlic (or to taste)
olive oil
salt
Bake eggplants, peel them and remove seeds. Just do this step,again, with peppers, cutting  them after that .Tomatoes are peeled and then, take the seeds out. Chop them. A bowl greased with oil then and stratify in: 
- a layer with tomatoes and parsley + salt
- a pepper layer 
- a layer of eggplant stuffed with slices of garlic
- repeat previous steps 
Sprinkle all with olive oil and baked for an hour.

Mincare de vinete, ardei copti si rosii



"Are Păstorel multe retete extraordinare, dar cea care urmeaza mai la vale e, de departe, una din preferatele mele pe timp de vara. Este, daca vreti, cea mai ingenioasa idee de a scoate vinetele coapte si ardeii asijderea din inevitabilele salate si de a le da un alt scop in viata. Si, cu precizarea ca ar trebui sa va dotati cu:

3 vinete
1 kg de ardei grasi
1 kg de rosii
1-2 legaturi de patrunjel(eu am pus si busuioc)
1 capatina de usturoi (sau dupa gust)
ulei, sare,
Coace vinetele, curata-le de coaja si scoate-le si simburii. La fel procedeaza si cu ardeii. Rosiile decojeste-le apoi scoate-le semintele si toaca-le.
Un vas se unge cu ulei apoi se stratifica:
-un start de rosii cu patrunjel + sare
-un strat de ardei
-un strat de vinete impanate cu felii de usturoi
-se repeta pasii anteriori
Stropeste cu ulei si da pentru o ora la cuptor.
