Chisatura

(from my Master, Radu Anton Roman, teachings...)

Ingredients:

smoked salo (or salted scrambles)
onion
salt

Paste smeared on bread or polenta, or a seasoning for soups,  chisatura  that shepherds cared wherever they go, could not be more Transylvanian  any if it would smells with  accent of Rozavlea-Maramures !
Chop the bacon and onion, as small as a betrayal, rub them with a little salt until a cream is made. You have just to imagine a huge slice of bread, smelling of a clay-oven and potatoes, smeared with  'chisatura '! The tired Ardelean* man, came from the forest, giving his straw hat on the neck, picking a  small bottle of brandy to the sun, "Yeah, servus, dear! " ... and drinks a mouthful of it , a mouthful as long as Salauta Valley is... and a light switches on his skin as a halo !

Chisatura

Enjoy!
